Pimanchaya Aonsutti – founder of Earth Tone, vegetarian restaurant with vegan, row, gluten-free options. They also sell different kinds of local products supporting local producers.
Q1: What do you appreciate yourself in the business mainly for?
We have things you can’t find anywhere else, not only vegetarian, but also row food, desserts without sugar, a lot of tempeh or quinoa which is difficult to get somewhere else. It makes us unique. Last 3 years were quite successful.
Q2: What is the biggest challenge for you now?
How can I make already good thingsto be better and better.More good products, more good desserts, better and healthier menu, but at the same time still delicious. Quite often healthy food has bad taste. I like when customers eat and feel like wow, this is unbelievable, it’s vegan, has no sugar and it’s still very good.
Q3: What advice do you have for yourself in this situation?
I keep thinking and keep listening customers. Sometimes I try new food, visit another place similar to ours, get ideas and some of them adapt to my place. I have to be open to see things, ask people, listen to customers. I follow their suggestions, they told me to start to do gluten-free things, or vegan things so I did it.
Would you like to add something more?
You should do thing you are passionate about. Trust your instinct. I listen myself and I’m always honest with customers. If I tell them it’s organic, it has to be organic.Nobody will follow you to check if it’s real or not, you have to be honest yourself. This is vegetarian but not vegan. Those things depend on trust a lot.
